Coleen Speaks’ sharp vision and fierce creativity have defined her culinary career, and are the hallmarks of PoshNosh Catering, which she opened in 2007. In 2017, Speaks expanded with a private event venue, Whitaker & Atlantic and adjacent neighborhood café and cocktail bar, Hummingbird.
From Emeril Lagasse’s NOLA Restaurant in New Orleans to Enoteca Vin with Chef Ashley Christensen in Raleigh, Speaks sharpened her skills in the front and back of the house before launching her own catering company, PoshNosh Catering. As PoshNosh flourished, capturing the boutique catering market thanks to her commitment to local, seasonal sourcing and her overall restaurant-quality food, service and style, she became the go-to caterer for everything from made-to-order ethnic street food like bibimbap to multi-coursed wine-paired dinners.
After a successful decade catering to Raleigh’s adventurous food connoisseurs, from musicians and artists to young Southern brides and corporate clients, Speaks vision for a large-scale, edgy, urban event space came to life at Whitaker & Atlantic. Well designed by Furnish Interiors and reDesign Build, with its own kitchen, permanent bar, access to outdoor promenade, bridal suite, full audio-visual capabilities and ability to scale the space, Whitaker & Atlantic is the destination for events reflecting Raleigh’s progressive and creative style. (Whitaker & Atlantic seats 150 for dinner and 220 for cocktails.)
With the opening of Hummingbird, Speaks returned to her restaurant roots, offering her first restaurant and bar open to the public. Hummingbird, located next door to Whitaker & Atlantic, is an unfussy and intimate bar setting, uniquely open day and night, serving breakfast, lunch and small plates in the evenings. Mornings offer full coffee service (and even boozy coffee cocktails) and ricotta fritters with jam; lunch and afternoon menus feature “Session” cocktails, a Vegetable Bahn Mi, Grilled Cheese, Po’ Boy and more. In the evenings, Hummingbird serves original and classic cocktails alongside Charbroiled Oysters, Pickled Shrimp and Pate and more small plates and bar snacks.
PoshNosh Catering, Whitaker & Atlantic and Hummingbird are among a handful of makers, entrepreneurs, artisans and retailers revitalizing Dock 1053 – originally built in 1955 for the Atlantic & Pacific Tea Company (A&P Grocery) as a regional distribution facility – the Triangle’s largest warehouse, in this burgeoning extension of downtown Raleigh.
